$5 Dinner: White Chili

This is a new Adams family favorite I thought I would share.

The prices listed below are an average of what I typically pay per the amount needed for the recipe.  Depending on your location, your prices may vary.  Since spices are used in very minimal amounts and are typically household staples, I don’t count those toward the meal price.

Serves 4

Ingredients:
1 pound boneless skinless chicken breasts, shredded- $2
3/4 cup orzo (rice would work fine too)- 30 cents
1/2 small onion, chopped- 25 cents
1 tablespoon vegetable oil
2 cans Great Northern beans, drained- $1.35
1 can whole kernel corn, drained- 50 cents
1 1/2 cups water
1/4 tablespoon ground cayenne pepper (or to taste)
1 4.5 oz can green chiles, chopped- 75 cents
1 teaspoon garlic powder
1 teaspoon ground cumin
1/2 teaspoon dried oregano
1/2 teaspoon dried cilantro
1/2 cup shredded cheddar cheese- 25 cents

Directions:

Cook chicken breast thoroughly.  (Method doesn’t really make a difference.  I baked my chicken.)  Then shred.

Cook orzo per box instructions, minus 2 minutes.  The orzo will finish it’s cooking in the chili.

In a large pot, heat  oil on medium high heat, then saute chopped onion for 2 minutes.  Reduce heat to medium low.

Add water, beans, corn, chicken, chiles, and spices to the large pot.  Then add orzo.  Stir well.

Heat for 15 minutes on medium low heat, and then simmer for an additional 20 minutes.  Stir occassionally.

Serve with cheddar cheese.

You might like to serve this chili with a side of bread.  ((Buy your bread on the discount bakery rack and freeze it until you need it.)  -50 cents

Final cost of meal, including suggested side:  $5.90

Oh Yummy — I love chili in the fall and winter. So delish!
